Recipe: Cheese Chilli
When I was unable to study and do anything productive at my home, I knew I needed a break. A holiday trip plan was already shattered into pieces because of some friends and their extra possessive parents. So, I knew it was time… time to go back to cooking.
I opened my recipe diary, picked up a recipe and went to market to get the ingredients missing in the list. If you want to know about the ingredients before looking at the super easy recipe of Cheese Chilli, look here:
For Paste:
- Cottage Cheese 200 gm
- 2 tbsp plain flour (maida)
- 2 tbsp corn flour
- 1 tsp Salt
- ¼ cup Water
- Oil for deep frying
For Main recipe:
- 2tbsp Oil
- 3 onions (thickly chopped)
- 1 capsicum
- 1 tsp garlic and ginger (finely chopped)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp ajino moto
- 1 ½ tbsp tomato ketchup
- 1 tsp soya sauce
- 2 tsp vinegar
- Pinch of orange red color
- 2 tsp chilli sauce
- ½ cup water
- 2 tsp cornflour
I am sure most of the ingredients are the regulars in an Indian’s home. What I needed to buy was corn flour, chilli sauce and ajino moto. Ajino Moto is a special kind of salt which is used in Chinese dishes. And it tastes awesome. Bring it home and you can give a little Chinese touch your every day food. But make sure you use it in mild quantity only. It’s not a replacement for common salt.
Recipe of Cheese Chilli
When I posted the picture of what I cooked, many asked for the recipe. So here is it. (hope my cooking teacher never comes across this blog or she will sue me 😛 )
For Paste:
In a small bowl, add plain flour, corn flour and salt. Mix and add water to the mixture gradually to make a thick but fine mixture.
Take a cooking pot (kadhai) and put oil into it. Make sure it is suitable enough for deep frying of the cheese. Cut the cheese into medium sized cubes (size depends upon your choice) and dip those into the paste and fry them until they become light yellow. Make sure you do frying under low flame.
Main Recipe:
Once you’re done with the frying part, the rest is very easy and quick. Take another cooking pot (you can use same one after removing the excess oil). Add 2 tbsp oil into it. Once it gets warm, put the finely chopped ginger and garlic and fry a little. Add onions and fry them till they become transparent.
Remember that you never cook the vegetables completely in Chinese food. Don’t let the onions get brown or even light brown. After they turn transparent, add capsicum and fry for almost half a minute. Add salt, pepper, Ajino Moto and mix well. Add the fried cheese cubes. Now add tomato ketchup, chilli sauce, soya sauce, vinegar and the color. Mix them well.
Take a ½ cup of water and add the corn flour to it and put it in the mixture in the cooking pot. Let the water dry up and the cheese chilly is ready. And it looks like this:
