This Gujarati dish is one of the most favorite dishes of Indians, especially after the movie 3 Idiots was released. The dish is prepared from the fermented batter consisting of semolina and gram flour. Though, there are different versions of this dish having different main ingredients but the one which I prepare at my home for an evening snack is this one.

Ingredients 

  1. Gram Flour (Besan) = 6 tbsp
  2. Semolina (Sooji) = 6 tbsp
  3. Refined Oil = 1 tbsp
  4. Sour curd = 1 & 1/2 cup
  5. Salt = 1 tsp
  6. Turmeric Powder (haldi_ = 1/4 tsp
  7. Suagr = 2 tsp
  8. Eno = 1 tsp (regular flavor)

  9. Oil = 1 tbsp
  10. Mustard Seeds = 1 tsp
  11. Green Chillies = 3-4 (Cut length wise)
  12. Green Coriander Leaves (To garnish)

Preparation Time: 35 minutes

Cooking Time: 25 minutes

Recipe of Dhokla

Take a bowl and add semolina, gram flour, sugar and oil to it. Yep, most of the Gujarati dishes involve use of sugar. Add curd, salt and turmeric powder. Mix well. Make sure you mix while moving your hand only in one direction. This is the tip from my mom’s kitchen. I don’t know what’s the significance behind that but whatever I prepare while following this small tip comes out to be really luscious.

Take a pressure cooker and add some water to it. Take a stand like this and keep it in the pressure cooker. Usually, people think that a dish like dhokla can be made in microwave but you never get the real taste like that. So, stick to the pressure cooker. Put the pressure cooker on sim flame.

Take a container that can be easily put on the stand inside the pressure cooker. Grease the container with help of oil very well.

On other side, add eno to the bowl. Beat well and then put the mixture inside the greased container quickly. Put the container inside the cooker. Don’t use the whistle. Cook it on high flame for 20 minutes.

After 20 minutes, turn off the flame. Let the cooker stay still till 10 minutes.

Take out the dhokla. It’s almost prepared.

Tampering

Take a pan and put it on flame. Add oil, mustard seeds and green chillies. Cut the dhokla into square pieces and put it in the pan. Fry a little and serve after garnish.
